Quick And Tasty Ground Turkey Vegetable  Soup

If you can't find the large tomato paste you can use 2 6 oz cans.

Susan's Zucchini Nut Banana Bread

1 and 1/2 cups granulated sugar

1 and 1/2 cups brown sugar

1 cup oil  (suggest canola oil)  (someone suggested to me using 1/2 cup apple sauce and 1/2 cup oil to cut the fat)

3 eggs (beat with fork)

1 cup grated raw zucchini - (dab dry with paper towel until almost dry)

1 cup mashed ripe bananas

2 1/2 heaping teaspoons sour cream

2 tsp vanilla

1 tsp allspice or cinnamon

1 tsp salt

1 tsp baking soda

1/2 tsp baking powder

1 cup chopped nuts of choice (suggest pecans or walnuts)

Other option: Add 1 and 1/4 cups raisins

*Mix all top ingredients together well*

Sift 3 level cups of flour then gradually add to mixture and mix well.

Spray two bread pans with non-stick cooking spray well,  then distribute mixture evenly.

Other Option; Sprinkle the tops with 1/4 cup ground nuts and 1/4 cup granulated sugar

Bake in a 350 preheated oven- for 40 to 60 minutes until brown and firm in center

( For just banana bread.... odd two cups ripe bananas)

(For just zucchini bread... use two cups zucchini)

 Ground Turkey Zucchini Spaghetti  Meat Sauce
(Healthy Crockpot Recipe)

Ingredients
. 2 (28oz) cans diced tomatoes
. 1 can (12oz) tomato paste
, 2 mounded Tbs Oregano
. 1 teaspoon salt
. 1/2 teaspoon ground black pepper
. 2 pound ground turkey (Honeysuckle)
. 2 TBS parsley flakes
. 2 or 3 garlic cloves diced
. 1 Lrg, zucchini diced

( If you want you could add onions and peppers - I serve them separately in a dish on the table.)


Directions:
 Crumble the ground turkey into small pieces and add to
the sauce and all other ingredients. Stir and make sure it is completely down into the sauce and cook on high for high for 5-6 hours or low 6 -7 hours.
Check and stir occasionally.  Stir cooked sauce, taste, and add
more seasoning as needed, if needed. Serve over pasta. Sprinkle with garlic salt, parsley , basel and parmesan as desired.   Serve with higher fiber white pasta.

Turkey Pepperoni Meatballs

ingredients

.  12 ounces deli pepperoni (sliced)

.  16 ounces mushrooms

.  1/2 of a medium onion

.  4 cloves garlic

.  2 pounds ground (honeysuckle turkey) frozen and thawed.

.  4 eggs

.  1 and 1/2 cup milk

.  2 and 1/2 cups panko Italian breadcrumbs

.  1 sleeve of saltine crackers crumbled

.  2 1/2 tsp teaspoons salt

.  1 and 1/2 teaspoon pepper

.  1 teaspoon paprika

instructions

1. Preheat the oven to 450 degrees F.

2. Add the pepperoni to a food processor.* Pulse thoroughly until it is ground completely . Then add it to the large bowl.

3. Add the mushrooms, onion, and garlic to the food processor and pulse until ground.

4. Add the ground turkey, eggs, milk, breadcrumbs and crackers, salt, pepper, and paprika.

5. Line a large baking sheet with foil and coat with nonstick spray.

6. Stir Until Mixed Well. Use a tablespoon to scoop into hand and shape into ball.

7. Form the meatballs into balls just bigger than a gulf ball. All The Same Size

8. Bake for 16 - 20 minutes, or until browned on the bottoms.

9. Serve with a healthy - turkey zucchini spaghetti sauce! Makes about 50 meatballs.

Additional Options Ideas:

. Fry onions and peppers and put them onto the table in a separate dish.

. Place both options of freshly shaved parmesan onto the table and also the store brand parmesan. 

. Bake fresh bread, cool and then cut, baste with a brush with a garlic and oil butter mixture and    brown it in the oven.

. Put oil in your boiling water before cooking your pasta.  This keeps it from sticking together after it's cooked. I use the higher fiber white pasta.  

. Serve a garden salad and an Italian dressing.
